NICE RASPBERRY AND CHOCOLATE MORNING MUFFINS
Not a big fan of breakfast? Try this delicious twist with Weetabix! Choose Weetabix as your nutritious extra B option; a serving only has two syns.
Though they won't taste exactly like classic chocolate muffins, these have a faint Weetabix flavour. Nonetheless, they have a delightful flavour overall and a light, fluffy texture. I ate them for breakfast and loved them best with some extra raspberries, strawberries, and chocolate sauce on top!
LUXURIOUS RASPBERRY AND CHOCOLATE MORNING MUFFINS
An original way to savour your morning Weetabix!

INGREDIENTS:
Two Weetabix
One teaspoon of cocoa powder
One teaspoon of baking powder
One teaspoon of vanilla extract
Two tablespoons fat-free Greek yoghurt
30 grammes of fresh or frozen raspberries
One egg
Two tablespoons of powdered Stevia
INSTRUCTIONS:
Set oven temperature to 180ºC. Apply calorie-conscious cooking spray to two muffin pans.
In a food processor, blend the Weetabix.
Blend in all of the ingredients after adding them.
Spoon the mixture into each of the two muffin cases.
Bake in the centre of the oven for fifteen minutes.
Accompany with raw berries.
Notes:
Anchor Light aerosol spray cream, which costs 1 syn for a 12.5g portion, goes very well with this dish. If you're feeling particularly decadent, try it with some raspberries!
