INGREDIENTS:
500g Lean 5% Minced Beef
250g of uncooked pasta
One diced onion
Two tablespoons of tomato puree
One clove of garlic, crushed
Six cherry tomatoes, cut in half
½ tsp Colemans Mustard Powder
Two large pickles, diced
300ml Stock of Beef
One teaspoon of paprika
320g Reduced Fat Cheddar Cheese [Grated]
Pinch Salt
Low-calorie cooking spray
INSTRUCTIONS:
Cook the pasta as directed on the package.
Apply a thin layer of low-fat cooking spray to a pan. Once added, sauté the mince until browned.
Add paprika, garlic, mustard powder, and a small amount of salt. Cook on medium heat for two minutes.
Turn the oven on to 200°C (180°C for fans) or Gas 6.
Add the pickles, onion, tomatoes, beef stock, and tomato puree. Simmer, uncovered, until the mixture thickens and most of the liquid has reduced 10 to 15 minutes.
After adding the cooked pasta, stir everything together and pour it into a baking dish.
Evenly scatter the grated cheese on top, then bake for 20 to 25 minutes, or until the cheese turns golden brown.
