YOU'LL NEED:
Four chicken breasts, chopped into small pieces
Two peppers, chopped and seeded
Diced one onion (or leek).
130g of baby corn, divided into thirds
A 330ml diet Coke can
200 ml stock of vegetables or poultry
Eight tablespoons of Passata
Four tablespoons of tomato puree
Two cloves of finely chopped garlic
Worcestershire sauce, two teaspoons
One tablespoon of Black Soy
One teaspoon of mixed herbs
Sugar-Free Cooking Spray
HOW TO MAKE SLIMMING WORLD DIET COKE CHICKEN:
Heat a skillet over the hob using low-fat cooking spray. Add the chicken, baby corn, pepper, onion and leeks. Stir-fry the chicken until it is nicely browned and the vegetables begin to soften.
Fry the garlic for one or two minutes after adding it and stirring it through.
Add the mixed herbs, Worcestershire sauce, stock, soy, passata, tomato puree, and coke. After bringing it to a boil, lower the heat so that it simmers. Simmer for 20 to 25 minutes, or until the liquid has thickened into a sauce and reduced significantly. To keep from sticking, stir from time to time. For the final five minutes, turn up the heat a little bit if the sauce hasn't thickened.
Savour the goodness and serve over rice!
