Ingredients:
800g thinly sliced skinless and boneless chicken thighs
low-calorie cooking spray
One clove of peeled and crushed garlic
Four spring onions, thinly sliced, plus one extra for decoration
One red pepper and one green pepper peeled and chopped into pieces
200g of freshly cut pineapple, in small pieces
Salted
For the Sauce:
One tablespoon of white vinegar
6 tablespoons light soy sauce
Tbsp of tomato puree
1-tablespoon rice vinegar
6 tsp orange juice, unsweetened
100 ml of chicken stock
1-2 tsp of sugar
One tablespoon of cornflour
Instructions:
Mix all the sauce ingredients in a bowl until the cornflour is completely mixed in. Put away.
Apply low-calorie cooking spray to a wok or deep fry pan and place it over high heat. Cook the chicken thoroughly by stirring-frying it for 6–7 minutes.
Stir-fry the peppers, garlic, and spring onions for a further two minutes.
Add the sauce to the pan and stir constantly for a minute or so, or until the sauce thickens. Make sure the veggies and chicken are thoroughly coated.
Take off the heat, mix in the pineapple, add some salt, and top with some spring onions. Over a large serving of noodles, serve.
Tips:
