I have to admit that, until a week ago, I had never tried hummus! To be honest, I never found it visually appealing. Luckily, I was able to sample it during the holiday season, though it was only on nachos and drenched in olive oil. However, anything can be made slimming world-friendly with a little ingenuity, right?

When I started making my hummus, I found that almost all of the recipes called for lemon juice. But in my first attempt, I found the lemon to be too bitter. I experimented a little and added smoked paprika and lime juice to give the hummus some extra zing.

Fancy equipment is not necessary, but a food processor or blender is. There is not much mess left after the quick and simple process.

INGREDIENTS:

400g Chickpeas in Can

A half-tsp of garlic powder

Four tablespoons of lime juice

1/4 tsp. paprika smoked

Three tablespoons of fat-free Greek yoghurt

1/2 teaspoon powdered mustard

A dash of dark pepper

A Smidge of Salt

INSTRUCTIONS:

Before adding the chickpeas to the blender, drain and rinse them.

To the blender, add the yoghurt, mustard powder, smoked paprika, garlic, half of the lime juice, salt, and pepper.

In a blender, blitz until smooth. If necessary, add extra lime juice or adjust the seasoning by tasting.

Serve right away or keep in the refrigerator in an airtight container for up to two or three days.
